White or yellow: it is a matter of flesh.
In the past you could distinguish potatoes according to the colour
of their flesh: the yellow ones were waxy and firm, while the
white ones were floury and starchy. The first ones could be boiled
and fried, while the second ones were more suitable for mashed
potatoes, gnocchi and rissoles. Today, many hybrid varieties have
partly destroyed this distinction. The “Association for
the promotion and protection of the potatoes of the Belbo valley”
was founded with the aim to protect the special characteristics
of the potatoes cultivated in this area.
The trail extends over the lands where this produce is cultivated.
It is a very versatile ingredient of the local cuisine, and “Her
Majesty the Potato” plays a leading role in many suggested
menus.
